Although I have quite a few quality knives, this is my first cleaver. When I first got it, I was very impressed by the weight (it's heavy), the sharpness of the blade, the wood holder, and the supplied blade protector. This is obviously a quality cleaver. My husband is a "tool guy", and when I showed it to him, he told me it was heavier and sharper than many of his axes. He commented it could easily chop down a medium sized tree. I, personally, think this cleaver is so cool. I reminds me a a medieval axe.This is not a knife, so it's not meant for cutting, but for chopping. My main purpose in buying this cleaver was to chop bones I use in broth into smaller pieces. By cutting the bones, the collagen in the bones is released into the broth. Previous to getting this cleaver, we used a huge bolt cutter my husband has to cut the bones. This cleaver makes it so much easier to chop the bones into smaller pieces for the broth.This cleaver comes with a sheath that can be used if you travel with it and a beautiful wood holder that looks great on the counter to keep it handy. Since this is my first cleaver, I'm sure I will find many uses for it, but I caution you on the sharpness. Since I have cut myself on a dicing disc and cuts with knives aren't uncommon, this is one cutting tool you want to keep your fingers out of the way. It is definitely very sharp.UPDATE 10/02/2022:Today I decided to make a 22 quart batch of chicken broth. For a batch of this quantity, I used over 8 lbs. of saved chicken bones, a package of chicken feet, and two chicken carcasses that had some meat on them. I cut everything into smaller pieces to release more of the collagen from the bones. I used this cleaver to cut all of the bones and carcasses, and the job got done so much faster than using my husband's bolt cutter. Love this cleaver and I'm sure I will find many more uses for it.I hope this review was helpful for you. I will update this review if my opinion changes and when I discover more uses for it.
